Ultimate Black Bean Burger with Corn Slaw

Whether you're cooking on the deck before heading out on the boat or putting together a quick lakeside meal, this recipe brings the perfect balance of comfort and freshness to your lake life menu.

Serves: 4 Prep Time 1.5 Cook Time: 15 mins

This burger is so good-and the best part? It’s healthy!! I didn’t expect my husband to like it, but after tasting mine, he immediately asked, "where’s my burger?”

Ingredients:

Burger

1 Can Black Beans (rinse and pat dry)

½ Cup Breadcrumbs

¼ Cup Yellow Onion

2 Cloves Garlic (minced)

1/4 Cup Red or Green Pepper

1 tbsp CRAVESmoked Seasoning or 1 tsp each Smoked Paprika, Cumin & Chili Power

½ tsp Cayenne Pepper

Salt/Pepper to taste

1 egg


1/4-1/2 Cup Veggie Oil

Smokey Mayo

½ Cup Mayo

1 tbsp Mustard

1 tsp Honey

1 ½ tsp Smoked Paprika

1 tsp Garlic Powder

2 tsp Chipotle Sauce 

Squeeze of Lime Juice

Mix everything together and chill until ready to use

Corn Slaw

2 Cups fresh corn

1 Cup Shredded Cabbage

¼ Cup Red Onion (thinly sliced)

¼ Cup Cilantro (chopped)

¼ Cup + 4 tbsp Mayo (more if needed)

1 Jalapeno (diced)

Juice of 1 Lime

2 tsp CRAVESmoked Seasoning or 1 tsp Smoked Paprika, 1/2 tsp each garlic powder and chili powder

Salt/Pepper to taste

Mix all ingredients together and chill


Directions:

Burger

Drain and rinse black beans until water runs clear

Lay out on Paper towel and pat dry

Add Beans to a container and mash with a fork or potato masher

Leave some unmashed ( adds texture to the burger)

Mix in all the ingredients except the egg

Adjust seasoning

Stir in egg

Once all ingredients are incorporated, form into balls

Put in the fridge for at least 30 minutes

Remove from fridge

Heat oil to medium in skillet 

Add burgers (do not overcrowd the pan)

Cook for about 4-5 minutes per side

Remove from heat and add to a paper towel


Build the burger

Toast your buns

Add your sauce to 1 or both buns

Add your burger

Add  your slaw

Top with avocado and feta cheese
