Lake Day Veggie Bowl
Fresh, vibrant, and full of lake-day flavor, this Lake Day Veggie Bowl with Shrimp is the perfect balance of light and satisfying. A crisp bed of cabbage slaw is topped with roasted sweet potatoes, sautéed asparagus, and sweet corn, then finished with perfectly seasoned shrimp and crumbled feta cheese. Drizzled with a bright lemon vinaigrette, every bite is refreshing, flavorful, and packed with wholesome goodness—perfect for a sunny day by the water or a quick, nourishing meal at home.
4 cups Cabbage ( I used the Cabbage slaw in the bag)
4 small Sweet Potatoes (peeled and diced)
2 cup Asparagus (rinsed and cut into 2-3 sections)
2 cup Frozen Corn (keep frozen until ready to use)
½ cup Red Onion
Feta Cheese
½ Cup Fresh Lemon Juice
6 Tbsp Olive Oil
2 tsp Dijon Mustard
4 tsp Honey
4 Sprigs Green Onions
2 Tbsp Butter
16 Large Shrimp
Smoked Paprika
Garlic Powder
Crushed Red Pepper
Slaw
Add Cabbage and Green onions to a bowl
Add 2 tsp of Honey
Add 2 Tbsp of Olive Oil
Add 2 Tbsp of Lemon Juice
Mix together and set aside
1 tsp each Smoked Paprika & Garlic Powder
Dressing
2 Tbsp Olive Oil
4 Tbsp Lemon Juice
2 tsp Honey
2 tsp Dijon Mustard
Pinch Crushed Red Pepper
Mix together and set aside
Instructions:
Preheat oven to 425
Add Sweet Potatoes to a shallow pan
Season with garlic powder and smoked paprika.
Drizzle with olive oil
Mix to incorporate
Add to oven for about 10 minutes or until potatoes are soften on the inside and slightly charred on the outside
In a skillet, medium heat melt 1/2 Tbsp of butter with 1/2 Tbsp olive oil
Add asparagus, sprinkle with seasonings and sauté until tender crisp (about 5 minutes)
Remove from the pan
Add frozen corn to the skillet, sprinkle with seasonings and sauté for about 3-4 minutes
Remove from the pan
Add more butter and olive oil, then add the shrimp and sprinkle with the seasonings
Sauté about 3 minutes per side or until done (do not overcook)
Remove from heat
Lets Build the Bowl
Add cabbage to the bottom of the bowl
Add sweet potatoes on top
Add asparagus then corn
Add shrimp on top or around your bowl
Top with feta cheese
Sprinkle red onions
Drizzle dressing over
Garnish with parsley(optional)
