Cajun Seafood Soup

Warm up with this rich and comforting Cajun Seafood Soup, packed with bold flavor in every spoonful. Tender shrimp, mussels, and scallops are simmered with sweet and red potatoes, sautéed peppers, onions, and garlic in a creamy, seasoned broth. This hearty soup brings together the perfect balance of spice, seafood, and soul, making it an irresistible dish for cozy nights or anytime you’re craving something warm and satisfying.

Ingredients

1 tbsp Butter

1 tbsp Olive Oil

¾ Cup Sweet Potato (peeled and diced)

5 Small Red Potatoes (peeled and diced)

½ Cup Red Pepper (diced)

½ Cup Sweet Onion (diced)

½ Cup Fresh Sliced Mushrooms 

1 tbsp CRAVE Cajun Seasoning (more if needed)

1 tsp Garlic (minced)

4 Cups Chicken Broth

1/2 Cup Clam Juice

1/2 Cup Heavy Cream

½ lb of each Shrimp.*Mussels.Scallops

2-3 Handfuls of Fresh Spinach

Garnish Crushed Red Pepper Flakes( Sprinkle, optional)

*for the mussels, I use frozen cooked mussels. I let them thaw and took them out of the shell (keep refrigerated until ready to use).

In a medium sized skillet

Melt the butter and olive oil together over medium heat.

Add both potatoes

Saute for about 8 minutes

Add pepper.onion and mushrooms to the potatoes

Cook for about 5 minutes

Sprinkle flour over the veggies 

Stir until fully incorporated

Add broth

Cook for about 3 minutes

Add garlic, clam juice and cream

Continue to cook until the potatoes are soft (not mushy)

Add shrimp

Cook for about two minutes

Add Scallops

Cook for a couple of minutes

Add cooked mussels and spinach

Stir until spinach wilts

Adjust your seasoning

Garnish with crushed red peppers
