Honey Chipotle Salmon & Shrimp Bowl

Sweet, smoky, and packed with bold flavor, this Honey Chipotle Salmon & Shrimp Bowl is the perfect balance of heat and sweetness. Sautéed salmon and shrimp are glazed in a honey chipotle sauce, then served over a fluffy bed of rice with a vibrant mix of cherry tomatoes, red onion, cucumbers, and black beans. Finished with a drizzle of creamy chipotle sauce, every bite is a fresh and fiery flavor explosion.

Prep Time: 2.5-3.5 hours (includes marinade time) Cook Time: 30 mins Servings: 4

Ingredients:

½ lb Shrimp (deveined & cleaned)

1 lb Salmon (skin removed, rinsed, cut into chunks)

2 Cups White or Brown Rice


Seafood Marinade: divide into (2) separate baggies

4 Tbsp Honey

2 Tbsp Chipotle Peppers (diced fine with juice)

1 tsp Cumin

1 tsp Smoked Paprika

1 Jalapeno (diced)

2 Tbsp Red Onion (diced)

2 Tbsp Garlic (diced)

1 Tbsp Olive Oil

Toppings:

¾ Cup Petite Tomatoes (halved)

½ Cup Red Onion (diced)

1 Cucumber (diced)

1 Avocado (sliced)

Handful fresh Cilantro (rinsed. dried. chopped)

1 Can Black Beans (rinsed)

Honey Chipotle Sauce:

1/3 Cup Sour Cream

1 Tbsp Honey

2 tsp Chipotle Peppers

1 tsp Garlic (minced)

½ tsp Cumin

½ tsp Smoked Paprika

½ tsp Salt

Juice from 1/2 Lime

Mix together and set aside



Add Shrimp to one marinade bag and Salmon to another bag

Marinade for 2-3 hours

Remove shrimp from marinade

Add 1 Tbsp butter and 1 Tbsp olive oil to a medium high skillet Add shrimp & sauté until done (about 5 minutes)

Remove from pan

Repeat with salmon

Cook about 3-4 minutes per side or until flaky

Remove from pan

Cook rice according to package direction

Season beans with Smoked Paprika, Cumin, Garlic and Onion Powder

Add rice to the bowl Top with Shrimp and Salmon

Add the extra toppings

Finish with the Honey Chipotle Sauce

Garnish with Cilantro
