Veggie Lasagna

Layered with love and loaded with flavor, this veggie-packed lasagna is a celebration of garden goodness. Roasted squash, zucchini, mushrooms, tomatoes, spinach, and broccoli come together with rich Italian seasoning, fresh basil, and layers of melty, gooey cheese. It's a hearty, comforting dish that even meat lovers will crave—pure veggie bliss in every bite.

Serves: 6-8 Prep Time: 1 hour Cook Time: 1.5 hours

This lasagna is so good-you’ll forget you’re eating only veggies!

Ingredients:

1 Zucchini (sliced)

1 Squash (sliced)

1 Sweet Onion (diced)

8 oz. Sliced Mushrooms

2 Cups Broccoli Florets

1 Red & Yellow Pepper (Diced)

2 handfuls of Spinach

1 14.5 oz. Can Diced Tomatoes w/basil, garlic, & oregano

32 oz. Jar Rao Tomato & Basil Marinara Sauce

1 Garlic Bulb (minced)

32 oz. Ricotta Cheese

2 ½ Cups each Fontina, Parmesan & Mozzarella Cheese (grated)

3-4 Tbsp CRAVE Italian Seasoning

2 Tbsp Basil

1 tsp Salt

¼ Cup Olive Oil

10 Lasagna Sheets

Preheat oven to 425

On a large baking sheet

Add squash, zucchini, half diced onion, ½ diced peppers, broccoli and mushrooms

Sprinkle with CRAVE Italian Seasoning and Basil

Pour Olive Oil over Mix everything together

Roast for about 10-15 minutes or until vegetables have softened (not mushy)

While veggies are cooking, add marinara sauce to a pot or large skillet along with remaining onions, peppers and garlic

Add Seasonings Cover and heat to a boil, stir. turn down to simmer

When veggies are done, add to the sauce

Continue to simmer for about 5 minutes

Stir in tomatoes and spinach

Continue to simmer while cooking lasagna according to package direction

Once lasagna is ready, drain and add back to the pot with cold water

Before you begin to build, be sure to adjust your seasoning in your sauce

Bottom Layer Spread light layer of sauce

2nd Layer Lay Lasagna sheets

3rd Layer Spread ricotta cheese over lasagna

4th Layer Spread mixed cheese over

Repeat Layers finishing with cheeses

Cover and bake for about 45 minutes or until cheese melts Once done, remove foil and Broil until you get a pretty finish Remove from the oven.

Let sit about 30 minutes before serving
